My mission
My name is Filippo,
Filippo Bertoli... known as "Scottie".
After years and years of working in prestigious Starred Restaurants, both in Italy and abroad, I intend to raise the level of gastronomic satisfaction of the client by cooking directly for You, and if You’ll want to, we will process and transform together, side by side, all the raw matters of the Italian cuisine into the most imaginative dishes and the ones from the Tuscan tradition:
Beef, sheep, horse, pig, game... Fish: both small cuts and large... all the seasonal vegetables of the garden combining each ingredient in a very whimsical and daring way.
And of course, we certainly will not miss the dessert tray, full of exquisite delicacies.
About me
In our family we have cooks galore! I inherited the master of Tuscan cuisine Pellegrino Artusi’s tome, where my great-grandmother Adele, an excellent cook, would draw inspiration. Later on, so did my grandmothers Licia and Michela, my father’s brother Marco, my brother Thomas, and I can’t leave out my mother Stefania. Ever since I was a young boy, I embraced this contagious passion turning it into the profession I viscerally love, constantly trying to get to know it and interpret it, without ever declaring myself satisfied.
My professional background
I spent 15 years of my career travelling around the world working side by side with the best starred chefs. I dived into different cultures and traditions, tasting the products of their local gastronomy. The Hotel Management and Hospitality Institute of Montecatini (PT) opened my wings by providing my references as a student to the starred restaurant of the Gallia Hotel in Punta Ala. The Chef Gualtiero Marchesi, in his starred home in Ebrusco (BS) introduced me to the most sublime levels of the Italian cuisine.
Other great star chefs with whom I have shared hours and hours of work have developed and consolidated my training and food and wine culture. The search for the best raw materials and respect for the producers who select them are cornerstones from which to start. Technique and new technologies the vehicle to enhance them.

I am back in Florence where I live and offer the organization of all kinds of events at your locations making menus of all kinds according to your needs, cooking classes, catering set up... I am supported by professionals in the choice of wines and the "mise en place" of the room. Whether it is a quiet dinner or a big party, I take care of the details so that you can focus on what matters: connecting with the people around your table.
